No35’s new chef, Stuart McVeigh, describes his own style as ‘modern European’ influenced by the amazing Australian produce.
Arriving to No35 from the Botantical, McVeigh has previously established himself through his work at Fenix and as Chef de Cuisine at Sofitel Melbourne On Collins.
Before his arrival in Australia, McVeigh worked with leading London restaurants, the 3-star Nico at 90 Park Lane and the 2-star The Square prior to becoming deputy to one of Australia’s top chefs in London, Shane Osborn, of the Pied a Terre Restaurant, who had a major influence in shaping McVeigh’s food philosophy and style.
